We started work in the restaurant industry during high school, going on to work in both Minneapolis and Seattle where Ben ended up as General Manager for the Tom Douglas group while Chris worked his way up to become one of Seattle’s 5 “hottest” chefs in 2018.(Seattle Met) Like so many others, when the pandemic wreaked havoc on the restaurant and food industries we took stock of our careers and decided to move back home to be closer to family and do our own thing our own way. Ben and I have seen the good, the bad, and the ugly in this industry and wanted to build a company that would push forward the change we want to see in the American food system. A company which creates the highest quality product using the highest quality ingredients possible, sourced as locally as possible. Beyond this we wanted our company to add to the ethical growth of the local economic engine of the driftless region. We are in a time of profound paradigm shift, and we see this shift all around the Midwest. We are proud to be a Midwest company and proud to be a part of this movement.

Who are they and what does that mean?
Chris’s grandparents, Lynn and Leroy Paulin were servants to their country and their community. Both served in the military during World War II in an effort to do their small part to combat hatred, inequality and pervasive cynicism. In an era when larger forces were at play, Lynn and Leroy decided to do what they could do to make a difference, to be part of an effort to resist inequality globally while fostering a sense of community at the local level. All of us have to do what we can with the time we have that is given to us. For us, following in the path of Lynn and Leroy means doing what we can to be a part of a regional effort to change how Americans see food. In order to keep us tied to this mission we focus on one thing–our customer. For us, quality ingredients are essential for healthy, delicious food for the individual and for a more sustainable and healthy economic infrastructure. Collaborating with distributors, grocery stores, farmers markets that share in this customer focused approach is the way we deliver on this promise. Committing to the midwest means partnering with midwest companies and instilling a sense of community in how we operate.
